Moist chicken thigh fillets coated in a subtle paprika marinade and grilled to perfection.

ground sweet paprika
olive oil
Salt and pepper to taste
1.Clean the chicken thigh fillets and then pat dry with paper towel. Trim away any excess fat from the chicken fillets.
2.Place chicken in a large bowl and add the remaining ingredients. Cover and allow to stand for at least 15 minutes. You may also marinate the chicken for longer or overnight if you wish.
3.Heat a grill pan and cook chicken on high heat for a few minutes on one side until nicely browned, then turn over for another few minutes. Turn down heat and cook covered for a further 10 minutes or until cooked through.
4.Serve the chicken with a Mixed Green Salad or vegetables of your choice and some Sweet Potato Chips.
