Zucchini Fritters are a delicious way to use zucchinis. Quick and easy to whip up and great for family mealtime.

Ingredients

large zucchinis, grated

large eggs

large brown onion, finely chopped

tablespoons
fresh parsley or dill
Salt and pepper to taste

cup
fetta cheese, crumbled

cloves of garlic, minced
½
cup
plain flour
½
teaspoon
baking powder
Olive or coconut oil for frying
Method
1.Combine all the ingredients in a large bowl. Add a little extra flour if the mixture is too wet.
2.Heat your choice of oil in a large frypan.
3.Scoop tablespoons of batter for each fritter into pan, flattening with a spatula. Cook until the underside is nicely golden brown, about 2 minutes. Flip the fritter and cook on the other side, about 1–2 minutes longer.
4.Serve immediately.
