A very simple yet delicious gluten free recipe containing the goodness of eggs.

large bacon pieces
Bunch of parsley to garnish or any herbs of your choice
1.Preheat oven to 200°C.
2.Prepare your muffin tin by greasing with any healthy oil such as olive or coconut.
3.Line the base and sides of each muffin hole with bacon ensuring no gaps are evident for the eggs to seep through.
4.Carefully crack one egg into each bacon lined muffin hole.
5.Sprinkle with fresh parsley or your favourite herbs or leave plain if you prefer.
6.Bake for 15 minutes.
7.Remove from oven and let stand for 4 minutes before removing the bacon and egg muffins from the pan.
8.Serve with your choice of vegetables or a salad.
You could also add some green vegetables to your bacon and egg muffins prior to cooking for a complete meal. Try finely cut broccoli florets, frozen peas or spinach. Just add them to the muffin hole after your egg and then top with herbs. Cook and enjoy!
