A contemporary Australian dish featuring fresh salmon fillets with a simple garnish. Easy to prepare.
Ingredients
Baked Maple Salmon

salmon fillets, skinned
1
large brown onion
½ punnet of cherry tomatoes
2
teaspoons
maple syrup
Salt and pepper
Blanched Asparagus
2
bunches of asparagus
Dash of olive oil

Method
1.Slice onion into medium thickness rings and divide into two ramekins. Size of ramekin should be just big enough to fit your salmon fillet.
2.Add skinned salmon fillet on top of onion rings.
3.Add cherry tomatoes to ramekins to fill either side of salmon fillet.
4.Drizzle maple syrup onto salmon fillet and season with salt and pepper.
5.Bake in a moderate oven for approximately 20 minutes. This will cook the salmon well.
6.Serve the maple salmon with fresh asparagus.
7.To blanch asparagus, simply pour boiling water over cleaned asparagus stalks and leave for 3 – 5 minutes. Drain water and season asparagus with olive oil and salt.
Use individual ramekin ovenproof dishes for baking. However, if additional servings are required, this recipe can be made using a larger baking dish. Longer cooking time may be required.
For a sugar free version, omit the maple syrup or substitute it with olive or macadamia oil. Serve with fresh blanched asparagus or any green vegetables.
