This simple dish is cooked in the large slow cooker: 4–5 litres (4–5 US liquid quarts), but in fact it only takes about 3 hours. Chorizo is considered to be a specialty sausage – but in fact it is available in most supermarkets. If your local supermarket does not stock Chorizo, it will certainly be found in your local delicatessen.

large Chorizo sausages chopped coarsely

medium red capsicum chopped coarsely

dried chili flakes

cloves of garlic, crushed

bay leaves
A handful of chopped fresh parsley
Method
1.Cook the onion and chorizo in a large frying pan in olive oil until browned.
2.Add the garlic and chilli flakes cook stirring until fragrant.
3.Add the capsicum, beans, undrained tomatoes, stock, bay leaves and chorizo mixture to the slow cooker.
4.Cook on low for three hours.
5.Remove the bay leaves and sprinkle with parsley.
