An easy version of an Italian favourite. Scaloppini means a thinly sliced cut of meat. This is a satisfying meal that can be prepared for a special occasion. This is a quick recipe to prepare, so it’s a good choice for a mid-week dinner.

Easy Veal Scaloppini

large brown onion

button mushrooms, sliced

millilitres
thickened cream

dried Italian herbs
Salt and pepper to taste
Fresh flat leaf parsley for garnish
Method
1.Pound steaks out thinly using a mallet.
2.Depending on how large the steaks are, cut them into thirds or halves.
3.Melt butter in a shallow pan, add veal steak pieces and cook quickly for 3–4 minutes, turning once. Remove from pan.
4.Add olive oil to the same pan, then add the onion and cook for a few minutes. Add sliced mushrooms and cook for a few minutes longer.
5.Add the veal steaks back into the pan along with the Italian herbs and salt to taste. Stir through.
6.Pour in cream and stir. Cover pan, simmer very gently for 8–10 minutes.
7.Plate up the Veal Scaloppini and sprinkle over fresh flat leaf parsley to garnish.
