The juiciest, tastiest steak you’ve ever eaten at home. The rib fillet or scotch fillet steak is one of the most popular steaks. They’re juicy, tender and full of flavour.

The rib fillet is a beef steak cut from the forequarter rib section of the animal. This cut of meat comes from an area of the animal that doesn’t do much work in terms of supporting or moving the frame, therefore when cooked, the muscle is tender not tough.

Ingredients

grass fed organic rib fillet steaks
Salt to taste

tablespoons
organic salted butter
1
cloves of garlic, minced
1
teaspoon
fresh thyme
Method
1.Preheat your grill pan until very hot.
2.Place steak in grill and sprinkle over a small pinch of salt. After 3–4 minutes, turn steak over and salt again. Keep in mind that the butter you will use to melt over the steak at the end is also salted, so you don’t need too much.
3.Cook steak to your liking. You can use an instant read thermometer to confirm doneness of steak.
4.Remove steak and allow to rest for a couple of minutes. In the meantime, prepare the garlic butter. Simply mix softened butter with minced garlic and fresh thyme. This can be prepared ahead of time and kept in the fridge.
5.Just before serving, top each steak with 1 tablespoon of the butter mix. This will melt into the meat and give it a lovely flavour, as well as keeping it moist.
Your steak is best cooked when it has rested at room temperature for at least 20 minutes prior to cooking. Do not cook it straight from the fridge.
