A simple kebab recipe great for the barbeque. A little time is required to assemble them. However, do the preparation in advance and all you have to do when your guests arrive is cook them and prepare a side dish and voilà the meal is ready in minutes!

Ingredients

lamb, diced
2
whole tomatoes, diced into similar size as lamb pieces
2
red onions, diced into similar size as lamb pieces
Bamboo skewers

tablespoons
olive oil
1
tablespoon
dried oregano
Salt and pepper to taste
Method
1.Soak the bamboo skewers in boiling hot water for a few minutes while you prepare the ingredients. This stops the skewers from burning on the barbeque.
2.Dice the tomatoes and onions to a similar size as the cubes of lamb.
3.Grab a skewer and start to thread the ingredients onto the stick. Start and end with a piece of onion. Alternate the ingredients, for example, onion, lamb, tomato, lamb, onion, lamb etc.
4.Make the skewers as big or as small as you’d like. Packing each skewer will make less shish kebabs in total.
5.Once all the shish kebabs have been assembled, then place them into a tray. Pour over the olive oil and add all the seasonings. Allow to marinate for at least half an hour.
6.Heat a grill pan or barbeque and cook the shish kebabs for a few minutes on both sides or until cooked to your liking.
A gas or coal fired barbeque is best. If you don’t have access to this a very hot griddle pan may be substituted, allowing cooking within the kitchen.
