Meatloaf is a delicious meal that involves a simple recipe that includes some fresh ingredients. When cooked it can be sliced straight away or anything that is leftover can be kept in the fridge and reheated easily in the microwave.

red cooking wine

Method
1.Soak the bread in a small amount of milk and then squeeze to remove excess fluid.
2.In a large bowl mix the mince, prosciutto, eggs, chopped garlic, parsley, grated parmesan cheese and the bread until a smooth mixture is obtained.
3.In a large pan sauté the onions, celery, carrots and crushed garlic in the olive oil.
4.Roll the meat mixture into a shape of a bread loaf, roll in through the bread crumbs and add it to the pan to brown.
5.Add the wine and allow it to evaporate.
6.Add the tomatoes plus the salt and pepper.
7.Cook on a low heat covered for about an hour.
8.Slice the meatloaf and serve covered in the sauce.
Serve with steamed green beans and asparagus.
