A quick, healthy and filling meal using whole organic free-range eggs. This meal is a great mid week dinner for when you’re feeling too tired to cook!

Ingredients
Omelette Pancake

large organic free-range eggs

grated tasty cheese

thickened cream

red onion, sliced

olive oil

feta cheese
Simply Spinach

grams
organic spinach

tablespoons
olive oil
Salt to taste
Method
1.Cook spinach, drain excess water then add olive oil and salt. Set aside.
2.Add eggs and cream to a bowl and whisk until combined and fluffy. Add grated cheese and stir to combine.
3.Heat oil in a frypan and cook onion until translucent.
4.Add egg mixture to pan and cook your omelette until cooked through and looking like a pancake.
5.Place egg pancake onto a serving plate.
6.Top with warm Simply Spinach and then crumble the feta cheese over the top.
