A quick, healthy and filling meal using whole organic free-range eggs. This meal is a great mid week dinner for when you’re feeling too tired to cook! Ingredients Method Ingredients Omelette Pancake 6 large organic free-range eggs ¼ cup grated tasty cheese 1 tablespoon thickened cream 1 red onion, sliced 1 tablespoon olive oil 100 grams feta cheese Simply Spinach 200 grams organic spinach 2 tablespoons olive oil Salt to taste Method 1.Cook spinach, drain excess water then add olive oil and salt. Set aside. 2.Add eggs and cream to a bowl and whisk until combined and fluffy. Add grated cheese and stir to combine. 3.Heat oil in a frypan and cook onion until translucent. 4.Add egg mixture to pan and cook your omelette until cooked through and looking like a pancake. 5.Place egg pancake onto a serving plate. 6.Top with warm Simply Spinach and then crumble the feta cheese over the top.
