Who doesn’t love a steak burger? You know the good old fashioned ones you could buy at a country café! Don’t fret, this recipe will take you back to those good old days – without that heavy feeling and insulin spike afterwards!

Ingredients

rib-eye steaks
Iceberg lettuce leaves
Tomato slices
Beetroot slices

large brown onion

tablespoon
olive oil

organic eggs
1
avocado
Tomato ketchup or barbeque sauce
Salt and pepper to taste
Method
1.Slice onion into rings. Heat oil in a frying pan and cook onions until nicely caramelised.
2.Pound beef steaks slightly to tenderise and to flatten. Steak burger steaks should not be too thick so they cook fairly quickly.
3.Heat a grill pan and add steaks. Season whilst cooking, then turn over and season on the other side. Cook the steak to your liking. Take the frypan off the heat and allow the steaks to rest while you prepare your other ingredients.
4.Fry the eggs in a little olive oil – leaving the yolk slightly runny.
5.Your burgers are now ready to assemble. Start with the lettuce leaves, top with the steak, sauce of your choice, fried egg, caramelised onions, tomato slices, beetroot slices and top each burger with half an avocado sliced into a fan shape.
